Upgrade your fried rice with juicy pineapple, mixed veggies, and eggs. This healthier recipe is ready in minutes and full of flavor!

Ingredients: 

  • 2 cups cooked white rice, chilled 
  • 1 cup diced pineapple 
  • 1 cup mixed vegetables (carrots, peas, bell pepper) 
  • 2 eggs, beaten 
  • Cooking spray 
  • 2 tablespoons reduced-sodium soy sauce 
  • Salt and pepper to taste 
  • Optional: chopped cilantro 
  • Optional: Chopped scallion 

Instructions: 

1. Heat a large non-stick wok or skillet over high heat. Spray with cooking spray to coat the pan. 

2. Add the beaten eggs and scramble until cooked. Remove from the pan and set aside. 

3. Add the mixed vegetables to the pan and stir-fry until tender, about 2-3 minutes. 

4. Add the chilled white rice to the pan and stir-fry for another 2-3 minutes, breaking up any clumps. 

5. Add the diced pineapple and cooked eggs to the pan and stir to combine. 

6. Season with soy sauce, salt, and pepper to taste. 

7. Optional: sprinkle with chopped cilantro and scallion. 

8. Serve hot and enjoy!
